FLAVOURED YOGHURT MOUSSE WITH GINGER BISCUIT POWDER

ingredients

2 coffee yoghurts
2 vanilla yoghurts
1 egg white
3 Williams pears
4 tablespoons Baileys Irish Cream
100 g ginger biscuits

method

Peel the pears and cut into small pieces. Sprinkle with 2 tablespoons Baileys.
Crush the ginger biscuits to a powder in an electric mixer.
Pour the vanilla yoghurts into a bowl and mix with the remaining Baileys.
Beat the egg white into stiff peaks and gently add to the vanilla yoghurt.
Divide the coffee yoghurt between 4 small glasses. Cover with the pear pieces then half of the ginger biscuit powder and the yoghurt, and finish with the remaining biscuit powder.
Serve immediately.

tip

This is a light dessert that is rich in proteins and calcium. While the alcoholic sweet Baileys is optional, do not substitute the ginger biscuits, which bring an essential caramel flavour.
